摘要
目的调查山东省16地市市售玉米粉中元素含量水平,评估重金属污染状况,并分析健康风险。方法于2022年9月采集山东省16地市市售玉米粉,利用微波消解-电感耦合等离子体质谱仪,测定玉米粉中20种微量元素含量,采用单因子污染指数法和Nemerow综合指数法评估玉米粉中重金属污染水平,采用点评估法评估摄入玉米粉对人体的健康风险。结果山东省16地市市售玉米粉中多种元素均有检出,含量较高的前五位元素依次为锌、锰、铷、硼、铜。铅、镉、汞、砷、铬元素的含量均在国家规定的限量值范围内,整体含量为铬>铅>砷>镉>汞。对玉米粉中20种元素的污染水平进行评价,单因子污染指数Pi均小于0.6,综合污染指数P_(综)均小于0.7,所测定元素含量均处于安全水平。威海市、济南市、东营市的玉米粉处于尚安全水平,其他地市均为清洁安全水平。膳食暴露评估表明,玉米粉中铅、镉、铬、砷、汞5种重金属元素的膳食安全限值均<1,5种重金属元素暴露对居民健康风险可接受,风险高低表现为铅>砷>铬>镉>汞。结论山东省市售玉米粉中重金属元素含量整体处于安全状态,人群摄入引起的健康风险较小,对于玉米粉中硼、铷等元素含量水平及摄入风险应引起关注。
Objective To investigate the element content of corn meal in 16cities in Shandong province,assess the heavy metal pollution status and analyze the health risk.Methods Corn flour was collected from 16cities in Shandong province in September 2022.Microwave digestion and inductively coupled plasma mass spectrometer were used to determine the content of 20trace elements in corn flour.Single factor pollution index method and Nemerow composite index method were used to evaluate the heavy metal pollution level in corn flour.A point assessment method was used to assess the health risk of ingesting corn meal.Results A variety of elements were detected in corn meal in 16cities in Shandong province.The top 5elements with higher content were zinc,manganese,rubidium,boron and copper.The content of lead,cadmium,mercury,arsenic and chromium elements were all within the limit value range stipulated by the state,and the overall content level was chromium>lead>arsenic>cadmium>mercury.The pollution levels of 20elements in corn meal were evaluated,and the single factor pollution index Pi was less than 0.6.The comprehensive pollution index(P)was less than 0.7,and the measured elements were all at the safe level.Cornmeal in Weihai city,Jinan city and Dongying city was at the still safe level,while all other cities were at the clean safe level.Dietary exposure assessment showed that the dietary safety limit(MOS)values of lead,cadmium,chromium,arsenic and mercury in corn meal were all less than 1,and exposure to 5heavy metals was acceptable to the health risk of residents,and the risk level was lead>arsenic>chromium>cadmium>mercury.Conclusion The content of heavy metal elements in corn meal in Shandong province is safe,and the health risk caused by population intake is small.Attention should be paid to the content levels of boron and rubidium in corn meal and the intake risk.
