摘要
以市政自来水和市售包装饮用水为对象,通过现场盲品和实验室检测两种形式,开展饮用水口感影响因素分析研究,探究影响口感的主要因素,了解市政生活饮用水与市售包装饮用水的口感特点与差异。结果表明,市售包装饮用水综合评价明显优于市政自来水和凉白开;市售包装饮用水口感优于市政自来水;长江水源自来水综合评价均优于黄浦江水源;感官敏感人员能明显识别出市政自来水、凉白开与市售包装饮用水。市政自来水和市售包装饮用水的7项感官性状指标述均满足生活饮用水或包装饮用水国标限值要求,且与品鉴得分呈现显著负相关,其中溶解性总固体、一氯胺(总氯)(R>0.85,P<0.01)是影响饮用水口感的主要感官性状指标。
Taking municipal tap water and commercial packaged drinking water as the object,this paper carried out an analysis and research on the influencing factors of drinking water taste through on-site blind tasting and laboratory testing,to explore the main influencing factors of drinking water taste,and to understand the taste characteristics and differences between municipal drinking water and commercially packaged drinking water.The results showed that the comprehensive evaluation of commercial packaged drinking water was better than municipal tap water and cooled boiled water.Commercial packaged drinking water taste better than municipal tap water;The comprehensive evaluation of water source of Yangtze River is better than that of Huangpu River.The sensory sensitive personnel can clearly identify municipal tap water,cooled boiled tap water and commercially packaged drinking water.The seven sensory traits of municipal tap water and commercial packaged drinking water all met the national water quality standard of drinking water or packaged drinking water,and showed a significant negative correlation with the score of tasting.The total dissolved solids and monochloramine(total chlorine)(R>0.85,P<0.01)were the main sensory traits affecting the taste of drinking water.
