摘要 观察食用菌饮食在运动员体能运动训练过程中发挥的重要作用,进一步探讨提高运动训练成绩、减少运动损伤的新方法.选60位运动员进行实验,并随机分为两组:对照组30例,在体能运动训练后,对照组给予普通正常饮食;实验组30例,在对照组饮食基础上,增加食用菌饮食:每日以金针菇30 g、香菇30 g、黑木耳20 g、银耳30 g、大枣6枚,炖汤食用.两组在体能运动训练结束后第1日清晨餐前及第5日清晨餐前各进行1次血清肌酸激酶(CK)、谷草转氨酶(AST)、乳酸脱氢酶(LDH)、血红蛋白、血细胞比容、超氧化物歧化酶(SOD)、丙二醛(MDA)水平测定并进行比较.结果:与训练结束后第1天比较,两组训练结束后第5天血清CK、AST、MDA水平均显著下降(P<0.01),LDH、SOD、血红蛋白、血细胞比容水平均显著升高,且实验组优于对照组(P<0.01).在运动员体能训练中,通过食用菌饮食调摄去改善运动性疲劳、运动性贫血和氧化应激损伤的效果是确切的,值得在体育教学中推广应用. Objective:To observe the important role of edible fungus diet in athletes’physical fitness training,and further explore new methods to improve the performance of sports training and reduce sports injury.Methods:60 athletes were selected and randomly divided into two groups:30 in the control group were given normal diet after physical exercise training;30 in the experimental group were given edible fungus diet based on the diet of the control group:30 in Flammulina velutipes,30 in Lentinus edodes,20 in Auricularia auricula,30 in tremella,6 in jube,and stewed soup.Serum creatine kinase(CK),aspartate aminotransferase(AST),lactate dehydrogenase(LDH),hemoglobin,hematocrit,superoxide dismutase(SOD)and malondialdehyde(MDA)levels were measured and compared between the two groups before breakfast on the 1st and 5th day after physical exercise training.Results:Compared with the first day after training,the levels of serum CK,AST and MDA decreased significantly on the fifth day after training in both groups(P<0.01),while the levels of LDH,SOD,hemoglobin and hematocrit increased significantly,and the experimental group was better than the control group(P<0.01).CONCLUSION:In the physical training of athletes,the effect of improving sports fatigue,sports anemia and oxidative stress injury through dietary intake of edible fungi is exact,which is worthy of popularization and application in sports teaching.
