摘要
以“津研1号”黄瓜为实验对象,研究了-100kV/m高压静电场处理对黄瓜采后失重率、腐烂率、破断应力、呼吸强度及细胞膜透性变化的影响,实验结果表明:高压静电场处理能够有效控制黄瓜采后的重量损失及腐烂程度,在温度13℃,相对湿度(RH)90%条件下贮藏14d时高压静电场处理组失重率仅为对照的47.8%,腐烂率仅为对照的11%。经高压静电场处理,黄瓜采后的破断应力得到了较好的保持。以果皮相对电导率表示的细胞膜透性上升减缓,说明高压静电场能够有效抑制黄瓜采后的衰老过程,但是高压静电场对黄瓜呼吸强度无显著影响。
The effect of high-voltage electrostatic field (HVEF) on the weight-losing rate, rot ratio, pulp hardness, respiratory activity and relative conductance of ‘Jin yan No.1’Cucumber was studied in this paper. The results showed that HVEF could reduce the weight-losing rate, rot ratio obviously. Meanwhile the decrease of pulp hardness of peach was controlled by HVEF. The relative conductance of cucumber under HVEF rises slowly, which indicated HVEF could control the ripeness and senescence of cucumber.
