摘要
以芹菜为原料进行制汁,通过对生产工艺的关键环节、护绿条件进行研究,有效地解决了芹菜护绿等技术问题,结果表明,加入EDTA可减慢叶绿素的褪色速度,使之应用范围扩大,提高了使用价值,确定了易于工业化生产的配方和工艺参数。
This paper discusses the condition on celery juice ,which used celery as the main material.By studying the key steps of the processing ,color keeping ,problems of a good green color keeping were solved .The results show that EDTA can slow down the discoloration speed of chlorophyll, which so increased its application and value. The formulation and technical parameters for the industrialization of product were defined.
