摘要
对玫瑰冠土种鸡、玫瑰冠♂×隐性白♀的杂交型肉鸡、快大型艾雏茵肉鸡、中速型鲁西黄肉鸡的肉品质及屠宰性能的比较研究可知:玫瑰冠土鸡的胸部和腿部发育均良好,肌肉总色素含量最高,粗蛋白含量较高,失水率最低,但其屠体重偏小;玫瑰冠♂×隐性白♀的杂交后代鸡的腿肌率、肌肉粗蛋白含量和透过率最高,屠体重也有明显提高,通过对比分析,进一步了解玫瑰冠土种鸡及其杂交后代的肉品质及屠宰性能的特点,为玫瑰冠土种鸡的品质改良与开发利用提供参考依据。
The paper studied meat quality and carcass trait of four different chickens.The results showed the growth of chest,leg muscle of rose cockscomb chicken were good.Meat coloring matter was the highest,the content of crude protein was higher,water loss rate was the lowest but the carcass weight was light. The leg muscle rate, the content of crude protein and permeation rate of the hybrids were the highest. The carcass weight was increased.The characters of meat quality and carcass trait were analyzed in rose cockscomb and the hybrid. The experiment provided the reference for the exploitation of rose cockscomb chicken.
