摘要
对泸州古酿酒作坊空气曲霉菌作了研究。室内空气中曲霉最高浓度为8914cfu/m3,优势曲霉菌是小冠曲霉,曲霉sp,米曲霉,黑曲霉和雪白曲霉。小冠曲霉和曲霉sp的优势是数量多,分别达3565cfu/m3和2307cfu/m3;米曲霉和黑曲霉则在生物量上占有显著优势。在古作坊中还偶尔检测到棕曲霉,烟曲霉等过客型曲霉。对几种主要曲霉培养后测定水解酶活性,结果米曲霉生成较多的淀粉糖化酶和液化淀粉酶;黑曲霉生成较多的脂肪酶,中性蛋白酶和酸性蛋白酶;小冠曲霉的脂肪酶活性较高;曲霉sp产酶活性处于中等水平;雪白曲霉的中性蛋白酶活性较高。小冠曲霉在浓香型曲酒酿造环境中属首次报导,该菌产生子囊果,其有性型名称为冠突散囊菌。
The aerial Aspergillus of the ancient liquor brewhouse in luzhou city has been studied.The most concentration of the aerial aspergillus in brewhouse reaches upto 8914 cfu/m3.The preponderant aspergillus spcies are Aspergillus cristatellus,Aspergillus sp.A.oryzae,A.niger and A.cadidus.A.cristatellus and Aspergillus sp.reaching upto 3565 cfu/m3 和 2307 cfu/m3respectively are predominant in concentration but A.oryzae and A.niger predominant in biomass.A.ochraceus,A.fumigatus and other aspergillus species emerge...
