摘要
单宁法提取菠萝蛋白酶中研究了单宁浓度、提取温度、pH值3个因素对提取菠萝中菠萝蛋白酶含量的影响。结果表明,提取菠萝中菠萝蛋白酶最佳提取工艺条件是添加单宁溶液的浓度为0.2%,提取时最适pH值为6.5~8.5左右,而最适提取温度为60℃。
The effects of three factors of tannin concentration,temperature,PH value on the extraction of bromelain were evaluated in this article.The results showed that the optimum extraction conditions are: the addition of 0.2% tannin concentration solution,6.5~8.5 PH value and 60 ℃.
