摘要
对珠江长臀鮠[Cranoglanis bouderius(Richardson)]的含肉率和肌肉营养成分进行了测定。结果表明,长臀鮠含肉率平均为69.42%,粗蛋白15.47%,粗脂肪7.43%,水分75.38%,粗灰分1.15%;检测出的17种氨基酸,总量为64.20%(干样),其中人体必需氨基酸总量29.28%,占氨基酸总量的45.62%,必需氨基酸的构成比例基本符合FAO/WHO的标准,必需氨基酸指数为58.70;鲜味氨基酸含量为24.83%,占氨基酸总量的38.64%。长臀鮠是一种营养丰富、适合养殖推广的优质淡水鱼类。
Nutritional components in the muscle of Cranoglanis bouderius were analyzed using ordinary standard methods.The results showed flesh rate was 69.42%,and contents of moisture,crude protein,crude fat,ash and were 75.38%,15.47%,7.43% and 1.15% in fresh muscle,respectively.The total mount of 17 kinds of amino acids was 64.20%(dry matter),with essential amino acids of 29.28%,accounting for 45.62% in total amino acids.According to nutrition evaluation in amino acids score(AAS) and chemical score(CS),the essential...
