摘要
以产自贵州遵义、花溪和河南地区的辣椒籽为试材,测定了其对不饱和脂肪酸、饱和脂肪酸的吸附能力,同时研究了不同处理条件下,辣椒籽对胆固醇的吸附能力。结果表明:辣椒籽对油脂的吸附能力总体为1.0g/g,不同产地辣椒籽对不饱和和饱和脂肪的吸附能力差异达显著水平;不同时间处理对辣椒籽吸附胆固醇能力的影响不大,当辣椒籽用量为0.01g时,其对胆固醇的吸附能力显著高于其它处理。不同产地辣椒籽材料间对胆固醇吸附能力的差异不显著。
Used the pepper seeds which coming form Zunyi in Guizhou,Huaxi and Henan as test materials to determine the absorptive properties for fat and cholesterol,meanwhile tested the absorptive capacity for cholesterol of pepper seeds under different treatment conditions.The results showed that the total absorptive capacity for fat of the pepper seeds' petiole was 1.0 g/g,the absorptive capacity showed the significances in different pepper seeds resources.The strongest adsorption capacity for cholesterol was 0.01 g pepper seeds' material.There was no significances among the pepper seeds resources about adsorption capacity for cholesterol.
