摘要
测定了农户散养模式、走地鸡养殖模式和笼养模式下清远麻鸡的物理性状、主要化学成分、肌肉组织学特性及氨基酸组成,并比较了3种养殖模式养殖的同品种清远麻鸡的肉质。结果表明:散养型清远麻鸡在色度、嫩度、系水率、肌内脂肪等理化指标,及鸡肉组织学特性等方面均显著优于笼养型清远麻鸡,走地鸡型清远麻鸡次之;散养型清远麻鸡的氨基酸含量、必需氨基酸种类及含量、呈味氨基酸的种类及含量均显著优于笼养型清远麻鸡,走地鸡型清远麻鸡次之。说明农户散养模式有利于清远麻鸡优良品质的形成。
The main physical properties,the main chemical compositions,the histological characteristics of muscle and the compositions of amino acid of Qingyuan partridge chicken with scatter culture pattern,ground-walking culture pattern and caged culture pattern were determined,and the meat quality of Qingyuan partridge chicken with the three culture patterns were compared.The results showed that the physical properties,such as color,tenderness,water retention rate,intramuscular fat,and the histological characteristics of muscle of the Qingyuan partridge chicken with scatter culture pattern were obviously better than which with caged culture pattern,and of which with ground-walking culture pattern was in the middle;the content of amino acid,the species and the content of essential amino acid,the species and the content of flavor amino acid in Qingyuan partridge chicken with scatter culture pattern were obviously better than which with caged culture pattern,and of which with ground-walking culture pattern was in the middle.Therefore,the scatter culture pattern is beneficial to forming quality characteristics for Qingyuan partridge chicken.
