摘要
伸展蛋白是广泛存在于植物细胞壁中的一类糖蛋白 ,它具有特征性的化学结构并在植物细胞壁中发挥着重要的生理功能。本文在综述伸展蛋白的结构和生理功能的基础上 ,初步分析和讨论了伸展蛋白的食品学研究意义。
Extensin is the glycoprotein existing widely in plant cell walls. It has special molecular structure and plant physiological functions.On the basis of the summary to the characteristics of the structure and functions of extensin, it discusses the possible effects on food science.
