摘要 综述了各种快速测定干酪中含氮物的方法,包括凯氏法,紫外光谱法,Lowry法,染料结合法,赤藓红法,茚三酮法,三硝基苯磺酸法,邻苯二甲醛法,荧光胺法。并对它们的适用范围、研究与使用状况进行评述。 This paper reviewed and discussed various techniques which could be used to determine nitrogenous compounds(proteins, peptides and free amino acids)in cheese.
