摘要
红曲霉能够生成多种生理活性而备受关注 ,但大多红曲霉同时也产生一种真菌毒素—桔霉素。红曲产品的桔霉素问题已经使我国红曲出口受到了很大的影响。介绍了红曲霉所产桔霉素的产生、合成途径。
The physiologically active subatance produced by monascus sp. has been researched widely. at the same time ,most of monascus sp. were proved to produce citrinin, which is a mycotoxin. Citrinin in HongQu(monascus sp.)has affected the HongQu export of our country.The property of citrinin produced by monascus sp. is introduced in this paper including Occurrence, biosynthesis, detection methods and some measures to avoid its production.
