生物技术包括基因工程、细胞工程、酶工程、发酵工程等。本文综述生物技术在保健食品开发中的应用,包括膳食纤维、活性多糖、功能性低聚糖、糖醇、活性肽及氨基酸、功能性油脂、核苷酸、糖苷、微量活性元素、乳酸菌等。
Biotechnology includes gene engineering, cell engineering, enzyme engineering, fermentation engineering, etc. This article surveys the applications of biotechnology in the development of health food as follows: dietary fiber, active polysaccharide, functional oligosaccharide, sugar alcohol, active peptide and amino acid, functional oil and fat, nucleotide, glycoside, active microelement, lactic acid bacteria, etc.
