摘要
以谷物胚为主要原料,采用全浆胶磨工艺制取胚乳,然后利用微生物技术,制成发酵胚乳饮料,这是一种新型的发酵型含活菌的饮料。本文主要介绍开发这种饮料的工艺过程及其技术关键。
Endosperm is prepared through the technological process of all syrup colloid mill , grain embryo taken as a main raw material. Then the fermented endosperm drink is produced with microbial technology . And this is a new type of fermented drink which contains living bacterium . This article chiefly introduces the technological process and technical key in exploiting the drink.
