摘要
本文通过定性和定量研究水解类植物多酚与明胶的反应,阐明了植物鞣质与胶原的结合机理,并精确的说明了植物多酚分子量和分子结构与其同蛋白质反应能力的关系,讨论了热力学和动力学因素对植物多酚——蛋白质反应的影响.所获研究结果对制革生产具有一定的指导意义.
