摘要
研究了用喷雾干燥法制备番茄红素微胶囊的生产工艺。以番茄红素油树脂为芯材,蛋白NC和碳水化合物MA为壁材,经均质、喷雾干燥制得番茄红素微胶囊。较优的工艺参数是蛋白NC和碳水化合物MA比例为2: 5,芯材含量40%,原料固形物含量为15%,乳化剂为吐温-80和司盘-80,HLB值为12,乳化剂用量3%,均质压力 50MPa(常温,均质3次),喷雾干燥进风温度160℃,出风温度110℃。在此基础上得到的微胶囊的包埋率为70%,经光照实验,微胶囊壁材对芯材具有很好的保护作用。
The preparation techniques of lycopene microcapsule by spray-drying were investigated in this paper. Lycopene oleo-resin was used as core materials and albumen NC and carbohydrate MA as wall materials. After homogenizing and spray-drying the lycopene microcapsule was prepared. The optimized technological parameters were obtained such as the proportion of albumen NC to carbohydrate MA was 2:5, the content of core materials 40%, the solid raw content 15%, and Tween-80 and Span-80 as emulsifiers, HLB value 12, the content of emulsifier 3%, homogenizing pressure 50 MPa (room temperature for three times), and the inlet temperature and outlet temperatures were 160℃ and 110℃ respectively. The embedding ratio can reach to 70% by this technique. We found that the wall materials have a important protection role when characterized by illumination experiments.
