摘要 β 胡萝卜素是类胡萝卜素家族中的典型代表,不仅是体内维生素A的重要来源,而且其本身可以预防、延缓和治疗某些疾病,尤其是癌症,同时也能提高机体的免疫功能。该文作者主要综述了天然β 胡萝卜素的生理功能、生产技术及应用的最新研究进展。 The beta-carotene is a typical kind of carotenoid family, which is not only the important source of vitamin A, but also has a significant physiologic effect on the human being. The beta-carotene may prevent, improve and even cure some diseases and can also improve the immune function of human being. Meanwhile, this carotene is a kind of natural pigments with high prices, and it also acts as drugs, nutritional supplements or the supplements to foods, forages and cosmetics.
