摘要
测定了葡萄籽蛋白质的等电点并分别研究了盐溶法和碱溶法提取葡萄籽蛋白质的工艺条件。研究结果表明:葡萄籽蛋白质的等电点为pI=3.8;碱溶法蛋白质提取率高于盐溶法,碱溶法提取蛋白质的最优工艺条件是以1×10-5mol/L浓度的NaOH溶液,按1∶15的料液比,在40℃条件下搅拌浸提40min,在此条件下葡萄籽蛋白质的提取率达73.78%。
Using salt solution and alkali solution for extraction of protein from grape seed were studied.The results showed the pI of trape seed the protein was 3.8 .The extraction rate of protein with alkali solution was better than that with salt solution.The optimum conditions with alkali solution were as follows:NaOH concentration 1×10^(-5)mol/L,extracting 40 minutes at temperature 40℃,the ratio of material to solvent 1∶15 (W/V),and the extraction rate of protein was 73.78% under the optimum conditions.
