摘要 本文利用主成分分析法,对芒果采后贮藏过程中8个指标的变化进行统计分析。结果表明,在所选的8个指标中,可基本划分为贮藏特性因子和生理因子,其中,贮藏特性主要由VitC含量、可滴定酸含量、失重率和叶绿素含量组成;生理因子主要由SOD活性、LOX活性、MDA含量三者组成。这两个主因子的贡献率分别为63.69%和32.46%,两者累计贡献率达96.15%,基本反映所有指标的信息。由此构建的综合评价模型也表明,果实品质在贮藏期的前10d略有上升,之后迅速下降,与实际情况基本吻合。 The principle component analysis(PCA) was used for statistic analysis on eight direction signs of post-harvest mangoes. The results showed that all the direction signs were vested in tow parts: one was storage characteristic factor, the other was physiological factor. The storage characteristic was composed of VitC content, titratable acid content, losing rate and chlorophyll content, and the physiological factor was composed of SOD activity, LOX activity and MDA content. Their dedicative rate was 63.69% and 32.46%, respectively, and the accumulative proportion for the tow factors was 96.16%. It reflected the information for all direction signs essentially. The integrated evaluate model on these basics also showed that the storage quality was improved a bit within 10d and then declined rapidly. These reflections were coincident with the facts basically.
