摘要
研究了壳聚糖及其衍生物对绿豆芽产量及品质的影响。结果表明,所有的壳聚糖及其衍生物不仅可以增加绿豆芽产量,而且可以提高绿豆芽的品质。其中壳聚糖谷氨酸盐表现最佳。在使用浓度为0.05%,浸种时间为8h时,总产量增加10%以上,Vc含量提高61.93%,且硬度、茎粗和茎长也有不同程度的增加。
Effects of chitosan and chitosan derivatives on yield and quality of mung bean sprouts were studied.The results indicated that all chitosan and chitosan derivatives increased yield and quality of mung bean sprouts. Among chitosan and chitosan derivatives,chitosan glutamate performed best.With 0.05% chitosan glutamate concentration and 8 h immersing time,total weight of bean sprouts was increased by 10%, Vitamin C content increased by 61.93% and hardness, thickness, length of sprouts were increased at different levels.
