摘要
5-羟甲基糠醛(5-HMF)是糖的降解产物。本文提出了用高效波相色谱法同时测定食品和药品中的蔗糖、葡萄糖、果糖和5-HMF的方法。采用氢型阳离子交换色谱柱AminexHPX-87H,以乙腈-0.01mol/L硫酸(40:60)为流动相分离糖和5-HMF。使用串联的紫外光度检测器(280nm)和示差折光检测器,分别检测5-HMF和糖。
5-Hydroxymethylfurfural (5-HMF) is a degradation product of sugars. A high performance liquid chromatography (HPLC) method for the simultaneous determination of sucrose, glucose, fructose and 5-HMF in foods and pharmaceuticals by HPLC is reported. 5-HMF and sugars are separated on an Aminex HPX-87H column (300× 7. 8 mm) with ace tonitrile-0. 01 mol/L H,SO4 (40: 60) as mobile phase and with dual detectors, a UV detector (280 nm) to measure 5-HMF, and a refractometer to measure sugars.
