摘要
以烟糯5号玉米为原料,采用α-淀粉酶制备仿乳玉米汁。在正交实验的基础上,得到仿乳制品原材料处理工艺的最佳液化条件为高温型α-淀粉酶0.20%、温度95℃、氯化钙0.16%、反应时间30min,制得的糯玉米汁口感滑爽、色泽乳黄,呈典型的糯玉米香,为糯玉米仿乳制品的生产提供可靠的原料汁。
Using the raw material of yan 5 waxy corn and the a-amylase, the technology of making com juice-like milk beverage through the orthogonal experiments was studied. The best conditions of the deliquescence are:high-temperature a-amylase 0.20%, temperature 95℃, CaCl2 0.16% and reacting time 30min. At last, the corn beverage is not only high nourishment but also light yellow color and good smell having the typical waxy corn flavor.
