挤压膨化玉米黄粉酶解制备生物活性肽 被引量:16

Praparation of Active Peptides from Extruded Corn Gluten

摘要 采用挤压膨化的方法预处理玉米黄粉,可提高Alcalase酶解玉米黄粉的水解度。确定了Alcalase酶解玉米黄粉的适宜条件,即60℃,pH8.5,底物浓度5%,加酶量3%,反应60min。该条件下玉米黄粉水解度为39.54%,水解物的分子量主要分布在3819~663Da之间。Alcalase酶解玉米黄粉的水解产物具有抗氧化活性。 Extrusion pre-treatment of corn gluten was applied to increase hydrolysis degree of corn gluten. Suitable hydrolysis condition of extruded corn gluten catalyzed by Alcalase was established. Degree of hydrolysis of entruded corn gluten of 5% reached 39.54% at the condition of 60℃ , pH 8.5, E/S 3% and hydrolysis time of 60min. Molecular weight of the hydrolysate distributed mainly over 3 819 - 663Da. The hydrolysate of extruded corn gluten by Alcalase had anti-oxidative activity.
