摘要
红曲色素是一种复合色素,文中介绍了其组成、来源、功能性、生产方法、食用安全性等,以及红曲系列产品在酿造酱油、豆瓣酱、甜面酱、大曲酒、浙江玫瑰醋等生产中的应用及效果。并提出了开发功能性红曲产品的发展方向,讨论了有关桔霉素的安全含量问题及红曲色素色价的测定方法。
Monascus pigment is a compound pigment, and its component, origin, functionality, production method and safety for consumption were introduced in this paper. Application and effect of a series of red koji products applied in soy sauce, soy paste, flour paste, Daqu liquor, Zhejiang rose rice vinegar etc. were also introduced. Developing trend of functional red koji, safe content of citrinin and determination of pigment concentration in red koji were discussed.
