介绍了膳食纤维改性后具有的特性、改性应用的主要方法(化学方法、生物技术方法、物理方法)及在保健食品、食品工业、可食性包装方面的应用进展.
The paper introduced the characteristics of modified dietary fiber, the main methods of modification（chemical, biotechnological and physical methods） and its application progress in sanitarian food, food industry and edible packaging.
