摘要
从酒文化的角度论述了黄酒的定义、制法、特点、风格和功能等特征,其具有源远流长的酿酒历史、精湛纯熟的酿酒工艺、蕴含深厚的文化内涵、众多的类别和名品、独特的风味、营养保健功能和药用价值及物美价廉、饮法多样等特点。存在自动化程度不高、功能性成分研究薄弱等不足。提出全方位研究机械化常年生产技术、采用现代化分析仪器和手段分析黄酒成分、实施信息化工程、应用高新生物技术提升黄酒传统产业,并加强营销、拓展市场,使黄酒走向世界。
This article discusses the definition ofmillet wine, its making methods, its features, characters and functions from wine cultureg aspect. With a long history and deep cultural background, millet wine has an excellent making technology, various types and unique tastes. As a high quality and low price product, millet wine has special medical values and typical health -care functions. However, millet wineg production is not automatically controlled, it also lacks the analysis of functional ingredients. Therefore, this article puts forward some suggestions, such as auto matic technology should be studied, modem analyzing equipment and analyzing approaches should be used to analyze millet wineg ingredient, information engineering project should be carried out and so on. This article also points out that biological technology should be used to develop the traditional millet wine production and marketing should be stressed to promote the millet wine into the world market.
