摘要
通过近二十年的开发研究和应用,证明魔芋胶不仅在保健方面有着独特功能,而且是一种优良的食品添加剂。通过本文研究,验证了魔芋胶作为食品添加剂与其它成分组合的典型作用机理,揭示了魔芋胶作为食品添加剂的广阔应用前景。
Intensive R&D efforts during the past 20 years or so on the property and application of konjac gum have been found, The gum is an excellent food additive in addition to its important health functions. This article describes the synergism by which konjac gum works with other typical ingredients or additives and has revealed broad application prospects for konjac gum in the food industry both as a food additive and a health ingredient.
