摘要
对冬枣采后可溶性固形物、糖、酸、VC、转红、褐变等品质指标的变化进行了综述,并对与衰老有关的酶以及呼吸、乙烯等生理生化指标的变化进行了探讨。
Dongzao Jujube is one of the best Jujube eultivar for fresh-eating for its dclieious taste and abundance nutritions.But it is subjected to water-loss,erimple, fermentation softening,decay,loss of vitamin C and finally lost its edible and commoditiy value. So the storage of Dongzao Jujube has been researched locus for many years. Many literatures have reported its quality,physiology and biochemical eharaeteristies duing postharvest, The quality ehanges of soluble substance contents, carbohydrate, titrate aeid, vitamin C, red- turing, browning, physiological and bio-chemical changes of enzymes related to senescence, respiration and ethene production were summrazied.
