摘要
目前,从天然植物中寻找抗氧化物质是研究的1个热点,抗氧化物质具有多方面的功能,作为食品添加剂它广泛应用于加工食品中。研究还表明抗氧化物质具有降低患癌症、心血管疾病及中风等疾病的作用。本文从几个方面综述了近来天然抗氧化物质的研究进展。
At present, it is considerable research interest to find antioxidant from natural plant. Antioxidant performs many functions. It is widely used in processing food as food additive. The study also shows that antioxidant perform an function of reducing suffering from such illnesses as cancer, cardiovascular diseases and apoplexia. The advances in study on natural antioxidants were summerized.
