摘要
研究了利用米糠内源性蛋白酶和谷氨酸脱羧酶富集γ-氨基丁酸(GABA)的工艺,通过正交实验得到最佳富集工艺条件是:温度44℃,料液比18∶,pH值5.2,时间6 h,反应中的限制性酶并非谷氨酸脱羧酶(GAD),而是米糠内源性蛋白酶。GA-BA的得率提高到242 mg/100 g米糠,经胶体磨作用,GABA的含量可达321 mg/100 g米糠。
A technology tbr enrichment of γ-amino butyric acid (GABA) was researched by means of endogenous protease in rice bran and glutamate deearboxylase. The optimum enrichment conditions obtained through the orthognnal experiment were: ratio of material to liquid 1:8, temperature 44℃, time 6 h, pH value 5.2, and in the reaction, the restrictive enzyme was not the glutamate decarboxylase (GAD) , but was the endogenous protease in rice bran, The output of GABA was increased to 242 mg/100 g rice bran, and the content of GABA could be up to 321 rag/100 g rice bran through the action of a colloid mill.
