摘要
猴头菇富含人体需要的多种营养成分,具有较高的医疗价值。现对猴头菇的营养保健功能及其在食品工业中的应用作一综述,为猴头菇的开发利用开辟新的途径。
Hericium erinaceus has abundant nutritions which are essential to the health of man. It has good medical and healthy function. This paper introduced the nutritional and healthy function of Hericium erinaceus and its application in food industry. The study provides a new and reliable way for the development and utilization of Hericium erinaceus .
