摘要
本文用圆二色谱、紫外吸收、荧光光谱对水溶液中β-环糊精包结香料的光谱行为进行了研究。获得了β-环糊精与苯甲醛、茴香醛、香兰素3种香料的包结比均为1:1;包结稳定常数分别为77、116、1287(L/mol)。对3种包结物的抗氧化能力进行了测试,并对影响包结物的稳定因素进行了初步探讨。
In this paper the reaction of benzaldehyde, methoxybenzaldehyde and vanillin with β-cyclodextrin has been studied by means of ICD, UV absorption and fluorescense spectrometry. The inclusion ratios of β-CD to these three spices and their inclusion stability constants have been obtaincd separately. The influence factors of the inclusion reaction have also been discussed preliminarily. Through the inclusion, the oxidation inhibition of these three spices has been enhanced.
