预测微生物学是运用微生物学、工程数学以及统计学进行数学建模,并建立各种食品微生物在产品加工、贮藏和流通条件下的基础信息库,以及预测食品中微生物数量的动态变化规律,达到运用模型预测和描述特定食品中微生物的生长和死亡状况的目的。白酒酿造过程建立白酒微生物学资源数据库和预测微生物学数学模型,可探究制曲和发酵过程中各类微生物的变化规律及各种环境因素对酿酒微生物类群衍变的影响规律,提高白酒酿造工艺设计的最适化。(孙悟)
Forecast microbiology refers to the mathematical modeling by means of microbiology, engineering mathematics and statistics, and the establishment of basic data bank of each food microbe during product processing, storage and circulation. Besides, it could forecast the dynamic change rules of microbial quantity in food, which could achieve the objective of describing the growth and death of microbes in food by models. The establishment of liquor microbiology resource data bank and forecast microbiology mathematical model in liquor production could make further understanding of the change rules of each kind of microbe in starter-making and fermentation and the effects of environment on the derivation of microbiological groups. In addition, it was helpful for the optimization of liquor-making techniques design. (Tran.by YUE yang)
