降解黄原胶与降解魔芋胶形成的凝胶体系的流变性 被引量:5

摘要 以降解黄原胶与降解魔芋胶为主要原料,将两者在一定条件下共混制得不同的凝胶体系,考察了共混比例、总胶浓度、共混时间、盐离子浓度对凝胶体系流变特性的影响,并研究了该凝胶体系的本构方程。结果表明:降解黄原胶与降解魔芋胶凝胶体系具有剪切变稀特性,其本构方程为非线性共转Jeffreys模型,模型计算值与实验值吻合良好。 Different gel systems were prepared by mixing degraded xathan and konjak in certain conditions. The impacts on rheological properties of the gel systems of influencing factors such as mixing ratio, total gum concentration, mixing time and ionic strength were studied. The constitutive equations of the gel systems were also investigated. The results show that the gel systems possess shear thinning property, the non-linear co-rotational Jeffreys model can be applied to describe the viscosity curves of gel systems correctly, the calculated values are in good agreement with the experimental data.
