摘要 壳聚糖是甲壳素脱乙酰化的产物,在食品工业中应用广泛。综述了国内外壳聚糖及其衍生物在食品工业中的重要作用和研究进展。 Chitosan is the deacetylated form of chitin. It is widely used in food industry. This paper re- viewed some application of chitosan and its derivatives in food industry.
