摘要
啤酒含有大量的抗氧化物质,不仅能防止啤酒老化变质,改善啤酒风味稳定性,而且对人体有抗氧化和抗衰老功能,有益于人体健康。采用清除DPPH自由基法评价啤酒外源性抗氧化能力,啤酒对DPPH自由基的清除率和啤酒与Vc对DPPH自由基清除能力的比较结果表明,啤酒对DPPH自由基具有较强的清除能力。(孙悟)
Beer contains large amount of antioxidative substances, which could not only prevent beer deterioration and improve beer flavor stability but also have healthcare functions. Beer antioxidative capacity was evaluated by DPPH free radical elimination method. Compared with beer and Vc, beer had stronger DPPH free radical elimination capacity.
