摘要
用紫外可见光谱分析,初步判断冬枣红色素的组成为类黄酮(包括黄酮类)、花色素苷类。通过对冬枣果皮红色素的NaOH提取液进行不同处理,对果实色素的稳定性进行了研究。在不同温度下水浴2 h,目测其外观颜色随着温度的升高而逐渐变浅,随着温度的升高,其吸光值呈现逐渐减小的趋势,温度越高,色素损失越多。进行避光、直射光、室内散射光处理发现色素对光照较敏感,易损失,应进行避光保存。供试的2种金属离子,钾离子和钙离子在各吸收峰处都有上升的趋势。红色素对氧化还原剂的处理比较稳定。不同pH值对冬枣色素的颜色变化及稳定性有一定影响。

Among 2 cations, K^+ , Ca^2+ have a increasing at the absorption peak. little effect on stability of the pigment. Different pH also affected the colour change and stability of red pigment of winter jujube peel.
