摘要
对三株产胞外多糖的乳酸菌鼠李糖乳杆菌YHOC137、植物乳杆菌NYC30和短乳杆菌NVC14的生物学性质进行了研究。三株乳酸菌的最适生长温度分别为37、35和30℃。三株乳酸菌均能在与人体小肠胆盐浓度接近的环境中生长。它们在pH6.0附近长势良好,pH过低或者过高都会抑制其生长。在pH2.0和pH3.0的环境中,它们能表现出良好的耐酸性。在4℃下保藏10d天后它们仍具有较高的存活率。
The biologic characteristics of three Lactobacillus strains that produce exopolysaccharide in vitro were mainly investigated in this paper. These three stains are L. rhamnosus YHOC137; L. plantarum NYC30; L. brevis NVC14. The optimal temperatures were 37 ℃ for YHOC137,35℃ for NYC30 and 30℃ for NVC14. These strains can grow on the bile concentration of 0.05%-0.3%. All of them can tolerance in the medium of pH 2.0 and pH 3.0. After preserved at 4℃ for 10 days, they can still grow well.
