摘要
为研究季铵化壳聚糖(HPTAC-CTS)对冬枣的保鲜效果,于-1℃~-2℃冷藏温度下,采用2%季铵化壳聚糖对冬枣进行涂膜保鲜处理,可保鲜贮藏冬枣80d。贮藏后果实不变形,果皮硬度高,果肉仍然很脆;腐烂率低于4%,好果率超过96%;失重率低于<5%,外观、口感可达贮藏前的水准;含糖量、含酸量、维生素C含量基本不变,保持原有风味和营养。
The fruits of Dongzao jujube cultivar were coated with 2% 2-hydroxypropyl-N-trinethyl ammonium chloride chitosan (HPTAC-CTS) and stored at temperature of-1 to -2 ℃ for 80 days, then the effect of HPTAC-CTS on its fresh keeping quality was studied. Results showed that the effect was good. The rotten fruit rate was lower than 4% and the fine fruit rate was over 96%. The fruit appearance and fruit juice could be nearly kept as the level before, because the weight loss was lower than 5%. The sugar content, acid content and Vc content had little change and maintained its original taste and nourishment.
