真菌溶菌酶及其在食品工业中的应用

摘要 真菌溶菌酶主要包括两大类:几丁质酶和β-葡聚糖酶。真菌溶菌酶作为天然防腐剂,在食品工业中具有广泛的用途。本文综述了国内外近年来在这一领域的研究进展,指出当前存在的问题,并对应用真菌溶菌酶提出了一些设想。 Fungal lysozyme include chitinases and β- glucanases. As natural food antiseptic agents, fungal lysozymes are applied in food industry widely. This article reviews advancement of research on fungal lysozyme in and abroad, points out problem of application of fungal lysozyme. This paper also puts forward application ideas of fungal lysozyme.
