介绍了贵州省自制传统食品安全现状,贵州省部分家庭自制传统食品的种类及其特色。根据贵州部分家庭自制传统三大类食品(即动物性食品、植物性食品和豆制品)的加工和制作工艺分析主要的化学性危害因素的来源及其危害性,根据国标检出含量分析可能有效的控制措施。
