摘要
抗菌材料能杀死或抑制食品在加工、储运和处理过程中存留于表面的微生物,延长食品的货架期和安全性。综述了抗菌保鲜膜的研究进展,介绍了抗菌保鲜膜的相关概念、国内外研究现状、制备及发展趋势。希望对今后抗菌保鲜膜的进一步研发起到一定的作用。
The antibacterial packaging can kill or inhibit microorganism on food surface in the processing, storage, transportation, and the treating processes, and also lengthen shelf life and increase security. The relative concepts, status and development trend of preparation in the world was introduced. The research and progress of antimicrobial preservative film was summarized. The purpose was to provide reference for further research of antimicrobial preservative film.
