酶作为生物催化剂,具有专一性强、催化效率高、反应条件温和等特点,长期以来,受到世界各国的重视。本文综述了酶制剂微胶囊的结构、制备、评价及在食品工业中的应用,并展望了酶制剂微胶囊的发展前景。
