摘要
通过正交实验对从泡菜中分离出的一株乳酸片球菌进行发酵条件的研究,结果发现乳酸片球菌素的产量除了与菌株自身性质有关外,其他发酵条件对片球菌素的产量和活性也有影响,包括培养基组分、培养基pH、培养温度以及培养时间,实验确定了产片球菌素的最佳培养基成分、最佳培养pH、最佳培养温度和最佳培养时间。
Orthogonal test was used to optimize a medium for pediocin production of Pediococcus acidilactici isolated from tradition food fermented China cabbage. The fermentation conditions had significant effects on the production and antimicrobial characteristic of pediocins. Among all the conditions, medium ingredients, culture pH, culture temperature and culture time of fermentation were the most significant factors.The optimum conditions of these factors were determined in this study.
