摘要
对国内外关于辣椒呼吸作用、乙烯释放、相关酶类、营养成分等采后主要生理变化以及采后贮藏保鲜技术的研究进展作了阐述。
Pepper is one of the vegetable species originated from the Tropics o Fresh pepper is very nutritious and rich in Vc. But pepper fruit will decay easily in a short time. The paper summarized the progress in postharvest physiology of peppers,including respiration, ethylene production, relevant enzymes and preservation technique, etc.
