摘要
以啤酒厂和麦芽厂废弃的大麦芽根提取磷脂酶后的残渣为主要原料,以沪酿3.042米曲霉为菌种,采用低盐固态发酵生产酱油,酱油中的氨基酸态氮为1.14%左右。为开发新的蛋白质资源,综合利用废弃的大麦根,减少环境污染开辟了一条新的途径。
Barley malt root which came from discarded beer malt after being extracted phospholipase was used as raw material for brewing sauce. The common low salt solid state fermentation technology was adopted. Starter was Aspergillus oryzae 3.042. Results showed that amino nitrogen was about 1.14%. The processing technology was convenient and applicable. It opens a new way for comprehensive utilization of discarded barley malt root.
