摘要 介绍了胶体的双电层模型、Zeta电位的概念和测量原理,DLVO理论与胶体稳定性的关系,Zeta电位在液态奶制品稳定性研究中的应用和前景展望。 The electric double layer model of colloid, the concept and measure principle of Zeta potential, the relationship between DLVO theory and the stability of colloid, and the application of Zeta potential in the research on the stability of liquid milk and its prospect are introduced in this paper.
