糊化活化淀粉的结构与性质表征

摘要 通过浊度分析表明:糊化活化淀粉的耐酸性、耐盐性,比可溶性淀粉好。通过凝胶色谱测定结果表明:糊化活化淀粉分离良好,产品相对分子质量分布较为均一,其相对分子质量为7238.70。纳米粒度分析仪测定表明:可溶性淀粉的粒径较小,随着温度的升高粒径均有变大的趋势。糊化活化淀粉的粒径均较大,且随温度的升高粒径先增大,当增加到较高的温度时,淀粉分子链断裂而使得粒径有所减少。SF-Ⅱ是SFT与明胶的反应产物,其分子粒径更大。且可溶性淀粉的粒径分布较宽,糊化活化淀粉及SF-Ⅱ的分子粒径分布较窄。FT-IR谱图表明了在SFS中羧基的存在,SFT中羰基的存在以及SF-Ⅱ中糊化活化淀粉与明胶产生了有效的结合,并同时存在一定数量的羧基和羰基。用β-环糊精糊化活化来模拟可溶性淀粉糊化活化后,SFS的^(13)CNMR图谱表明了在SFS中有大量的羧基存在。 The nephelometer analysis indicates the property of resistance to acid and salt of gelled - activated starch is better than that of solubility starch. HPGPC spectrum shows the separation of gelled - activated starach is excellent, relative molecule weight is 7 238.70 and the distribution is even. The result of granule diameter determination denotes starch is small, the granule diameter increases with the increase of temperature. The granule diameter of gelled - activated starch is bigger, and firstly increases with the increase of temperature, then decreases with the increase of temperature because of the rupturation of molecular chain. SF - Ⅱ is the reaction product between SFT and glutin, so the granule diameter is biggest. The granule diameter distribution of starch is wide, and the distribution of gelled - activated starach and SF - Ⅱ is narrow. And the activated group from the SFS, SFT and SF - Ⅱ have been testified by FT - IR. There are lots of carboxyls in the gelled - activated β - ring dextrin which simulates the gelled- activated starch by ^13CNMR.
